Hi Helen, thanks for that. I can't decide what cake to make for Christmas this year. My little boy is 6 and has only been vegan for about 6 months. He was vegetarian since birth. He still misses chocolate treats so I might experiment with a vegan chocolate/orange cake. I'll practice with different cakes and see which one is a hit.

Hi Janet, no I don't use egg substitute, mainly because there are so many wonderful vegan cake recipes around that I've never needed to adapt any 'eggy' recipes.
In the fruit cake I used sunflower oil, in fact I seem to use oil quite alot with the occasional recipe calling for vegetable margarine (which is usually sunflower as well!).

Looks lovely. What vegan fat do you use for baking cakes. I have had some success with chocolate cake, carrot cake and lemon cake by using sunflower oil and a small amount of organic coconut oil. I don't use any egg substitute. Do you?
