Simply Spinach
Managed to buy some spinach on Saturday from Carrefour, proper spinach, not the picked from the roadside “honestly it tastes just like spinach” weeds, that some people try to pass off as being as good as spinach. I love spinach and junior used to love it as well but obviously that has all changed now and she looks at us in disbelief if we tell her she used to eat it by the handful – literally!
Normally I whack it into a lentil dahl or some other curry type dish but after being deprived of it for a while I decided to put it on a pizza instead. I decided to make a pizza when we were all already rather hungry so I had to find a quick and easy base to make that wouldn’t require kneading and time to rise. I did find the quickest base ever and it turned out rather well, although next time I’ll let the base bake a little longer first before adding all the toppings. It was a resounding success though with both Sean and junior, with junior managing to eat hers before it had gone completely cold – no mean feat I can assure you.

That melty cheesey bit on the left is for Sean so, obviously, not vegan but fortunately I managed to get the pic before he lobbed ham all over his half!
We had homemade hummus for tea last night to eradicate the memory of some hummus we’d bought in Carrefour, the taste and smell of which will stay with me for a long time. To say it was disgusting would be kind, it was in fact an abomination, rancid goo masquerading as hummus. I take my hummus seriously and believe it should only have chick peas, lemon juice, garlic and tahini in, anything else is totally unnecessary and just plain wrong. I’ll just stick to making my own.
