Improving vegan

After reprimanding myself in the last post for my lack of culinary output, I pointed myself firmly in the direction of the kitchen (which is basically just next to the computer!) and tried to rectify the matter. Sean had over bought on the bread so I transformed the older loaf into a bread salad which I have to say is so simple and yet so lovely that I think I’ll make him deliberately over buy again next week!

Very healthy I’ll think you agree but don’t worry the balance of badness was soon equal again with the production of sticky banana brownies. Well what else are you supposed to do when you have 4 ‘manky’ bananas which your small child refuses to eat? She did however devour the brownies (as did her father) though I must say I prefer a plain chocolate brownie myself. Nevertheless, here is a picture which isn’t very good but which does show how gooey they are.

My culinary endeavours do not stop there, oh no, I quickly whipped up a batch of carrot muffins yesterday evening to take with us as we’d been invited over to someone’s house for dinner. They very nicely made spaghetti with fresh pesto which we thoroughly enjoyed including junior. Being an impatient child however, we’d only just stepped in the door when she started saying “is the spaghetti ready yet?” and then bemoaning the length of time it was taking. Once she’d finished she was then heard to say “can I have a carrot muffin? we brought carrot muffins, mummy made them, yum yum.” Sean duly got her a carrot muffin to shut her up which worked momentarily although she was most distressed that we left the others behind. As we headed out of the door she looked longingly behind and said “we’ve left our muffins behind”. The concept of sharing is not huge with junior!
I’ve just made a puy lentil salad and a mixed rice salad which are both in the fridge for tomorrow. Obviously junior won’t eat them but it might stop Sean standing in front of the fridge heaving huge sighs when he can’t immediately spot something to eat!
Talking of Sean, it was his birthday last week so we went to Agnanti for lunch. I won’t show you what the birthday boy had for lunch as it was definitely not vegan but junior had……….let’s see if you can guess before you look at the picture………….

yes, of course, you guessed it, it was grated carrot with olive oil. That’s junior’s hand hovering in the background waiting for mummy to stop with the photos already! She also had the obligatory pitta but one pitta is much the same as the other so no photo you’ll be pleased to hear. I had ‘Imam” which was absolutely divine.

Obviously the views at Agnanti help the whole lunch experience as did the weather which of course is extremely sunny at the moment. Off to find fresh basil and pine nuts next week to make junior her pesto – I may let you know how it goes!
