Lazy vegan

Yes, that’s me. I hold my hand up and admit to have being a lazy vegan for the past week. Trouble is I find it difficult to motivate myself to cook when I just don’t feel that hungry. I still cook for junior of course but sometimes I just can’t be bothered doing anything for myself. Sean then doesn’t eat anything either because even though he’s hungry, his apathy wins hands down!
Been a bit more motivated the past couple of days and apart from shop bought spinach pies (I lurve spinach!!!!) we’ve had some nice pasta salad which even junior ate and a lentil salad, which she wouldn’t touch. I also made a monster batch of hummus which we’re slowly ploughing our way through, we must smell absolutely delightful. Also been making more onion bhajis which are just so quick and easy to do and taste great and oat biscuits which junior dismissed with a flick of her hair! Promised her we’ll make carrot muffins today and then next week hot cross buns (she insists they must be minus crosses!) and chocolate easter nests. She does like her sweet things. Still trying to broaden her foodie repertoire but it seems to have got stuck on sweetcorn and pitta bread at the moment!
