It’s a full time job…
being a vegan. Actually that should probably say it’s a full time job being a vegan who works part-time and then spends the rest of the time looking after a 4 year old. But that was too much to put in the title!
After a disastrous attempt to get junior to eat potato on Monday night which ended in tears, tantrums and sulks (and that was just me!), last night we had pitta pizzas. Quick, easy, and you would think, appealing to the younger audience. Unfortunately nothing new appeals to my younger audience so, on being given control of what she wanted on her pizza, she eschewed the passata, the mushroom and the onion until she ended up with olive oil pitta with sweetcorn on! She then proceeded to smother it in vegan parmazano and pick up the individual bits of corn one by one. Eventually I persuaded her to try a bit of pitta which surprised her as she actually liked it and carried on, voluntarily, to eat a bit more. After this minor success (you have to grab every bit of hope where you can) she then had a chocolate cookie which I’d made earlier. She enjoyed the biscuit but not the cherry jam on top and after an initial delight at the taste, she decided the jam was yuck and had to be removed in order for her to further enjoy the chocolate taste untainted by the yucky cherry taste. After making the biccies I’d made lemon curd vegan style which obviously has no eggs in it. Pre-vegan I used to love lemon curd so I thought the recipe had to be worth a go as it was very easy and very quick. You just have to keep stirring to get any lumps out which was hampered somewhat by a shouting 4 year old in the bathroom who couldn’t reach the toilet roll! I managed to pound the lumps out and after initially believing it was a disaster, because it resembled rather badly mixed wallpaper paste, I tasted it and….wow it was good. I had it this morning for breakfast as did Sean of course – he’s never one to miss out.
On top of making pitta pizzas, biccies, vegan lemon curd, a batch of soya milk and soaking some chickpeas for hummus later I also made a sheep mask with junior, built a tent, made a Felicity Wishes room and gave her a bath as well as listening to her constantly because she can talk for Europe.
Hummus and Nasi goreng for dinner. Wonder if junior will eat any?
