Trashy Vegan
Sometimes I just can’t be bothered cooking and I just want trash to eat. That is when I reach for the large bag of crisps and the lager and chocolate of course, always chocolate. But those days are few and far between and most of the time you will find me preparing meals for junior to turn her nose up at. Highlights for me last week, although not for junior of course, were vegetable pakoras, vegetable curry and home made chapattis. I’d like to bet I was the only person in Skopelos on Saturday night making chapattis! Having never made them before I was pleasantly surprised at how easy they are to make. I suppose when you have a plethora of foods to choose from, as we did in England, you don’t have to make as much of an effort. So, picture below of home made chapatti with my home made curry and home made curry sauce.

Junior and I also made chocolate brownies on Friday and all I can say is YUM. They were really quick to make and it hardly took any time to eat them! In fact I only just managed to get this picture before they all completely disappeared.

Not a great picture I admit but I had to take it quickly before it vanished down the gullet of a greedy vegan.
We also had a massive bowl of rice pudding last night, mainly due to the fact that my soya milk came out rather watery (my filter was clogged – don’t ask!) and wasn’t fit for junior consumption unless mixed into something else. Not that I was complaining of course as I love rice pudding and so does junior. It did mean I had to make another batch of milk last night so that there would be some for the morning but it’s a small price to pay.
I’ve decided to be all organised this week and have already compiled a list of this weeks menus. We’ll see if I can stick to that for longer than a day!
